Buffalo Wild Rice Casserole
1 lb. ground buffalo
_ cup chopped onion
_ tsp. pepper
1 cup wild rice rinsed and drained
3 cups water
1 T butter
2 cans mushroom soup
_ cup white rice
1 can sliced water chestnuts drained
1 can Chinese vegetables drained
1 (4 oz.) can mushrooms sliced
1 cup diced celery
2 T. soy sauce
2 soup cans water
Bring to boil 3 cups water and 1 T butter, add wild rice and reduce heat and
simmer for 55 min. or until done. In the mean time brown ground Buffalo, onion
and _ pepper. Drain. In a large casserole put mushroom soup and 2 soup cans
water and stir well. Add all of the ingredients and stir well. Bake at 375
degrees for about 1 hr. Add more soy sauce to taste is wanted. May have to
add more water. (do not add salt, as the soy sauce is salty).
